As a child, I never understood why anyone would choose carrot cake over, say, chocolate, or ice cream, or any other high-in-sugar, low-in-natural-produce gooey delight. I found it plain wrong mixing vegetables with desserts and gave my father looks that would kill whenever he’d order carrot cake (his favorite dessert) at a restaurant. Over time, I moved past my limited palette and menu prejudice, and discovered a new world of textured delight found beneath creamy frosting. At 33-years-old, I am proud to call myself a “carrot cake convert”.
Sure they’ve got a boring name, and will never compete with the aesthetics of a Bombe Alaska or a Black Forrest Gâteau, yet you can’t help but respect their understated elegance and the gift of nighttime vision they bestow upon their eater.
These 10 carrot cake recipes that I’ve painstakingly scoured the World Wide Web for, will have you salivating into your lap before you can say “pass me a spork”.
1. Del’s Best Ever Carrot Cake
This self-proclaimed “Best Ever Carrot Cake” recipe has a lot to live up to, but with an unwavering commitment to freshness, moisture and that all important crunch – it has earned its stripes in my eyes.
2. Bourke Street Bakery’s Carrot Cake
Hailing from Sydney, Australia, I’m spoilt for choice when it comes to fashionable cafes spawning bearded hipsters and inflated prices; Bourke Street Bakery being one of them. But what this boulangerie lacks in humility, it makes up for in flavor. I’m yet to find a carrot cake that slides down easier with a morning Earl Grey than this one does.
3. Carrot Cake Cheesecake
What happens when you take a third course favorite and combine it with another? You get a mouth-watering hybrid of tanginess, tenderness and tight trousers. Mel was certainly feeling daring when she whipped this one up in her kitchen.
4. Carrot And Pecan Mug Cake
Not everyone can cook, nor cares to. Which is why this five-minute feast whose only prerequisite is a mug (chipped if you like) – will inspire the Martha Stewart in the most uninspired.
5. Chrissy Teigan’s Carrot Cake
Because if it’s good enough for Chrissy Teigan – it’s good enough for us. Plus it’s from the South, and from what I hear, everything tastes better down there.
6. Mini-Carrot Cakes
I’m probably not the first to admit that when it comes to dessert – I’m not a fan of sharing, and find a slice doesn’t always cut it. These mini-carrot cakes allow the fatty in all of us to savour an entire cake without feelings of guilt or gluttony.
7. Moist Carrot Cake
You had me at the word “moist”…
8. Orange Vegan Carrot Cake w/ Cashew Nut Cream Frosting
No eggs? No dairy? You’re kidding right?
Well, no I’m not. Even I was shocked at how delicious this ‘naughty free’ carrot cake recipe actually was. It just goes to show you that when you trust in the spice, and add a touch more of the orange – the bland becomes beautiful.
9. Sweet Paul’s Carrot Cake
I’ll admit – Sweet Paul’s recipes are somewhat a favorite of mine, so I was intrigued to discover what his take on carrot cake would be. I wasn’t disappointed.
In true Sweet Paul style, he made his carrot cake decadent, multi-layered, and topped off with a Bambi. If you serve this one up at a dinner party and don’t hear an applause – it’s time to seek some new friends.
10. Nut-Free Paleo Carrot Cake
For this last recipe, I came across a tasty nut-free carrot cake right out of Elana’s fancy pantry, so that people with food allergies can devour this recipe without caution. I don’t think the Himalayas have peaks as impressive as this one!
